Gongura Mutton

Ingredients:gonguramutton

1 pound lamb meat, cleaned and cut into pieces
1/2 tsp turmeric powder
Salt to taste
10 cloves of garlic
1/2 inch piece of ginger
For the curry
3 tsp cooking oil
4 cloves
4 green cardamoms
2 bay leaves
1 large cinnamon stick
A bunch Gongura leaves
1 large onion finely chopped
1 Sprig curry leaves

Boil the mutton and ginger garlic with some salt in a pressure cooker.

Clean Ginger and garlic. Make a paste.

Heat oil in a thick bottom pan and add all whole spices.
Once they start spluttering, add ginger garlic paste, green chilies and then onions.

Sauté till it becomes brown in color and then add Gongura leaves, Curry leaves and all ground spices and salt.

Sauté till oil is separated from the mixture.

Now add meat pieces and sauté for five minutes and mix well.

Then add water for curry and boil till it thickens

Garnish with fresh coriander or mint leaves and serve with rice.
