Mutton Pulav
Ingredients
To make extract
2 pounds meat (lamb or goat)
5 cloves
6 Black Pepper corns
6 Cardamom
2 inch cinnamon stick
6 bay leaves
1 tsp shahjeera
3 star anise
1 large onion finely chopped
5 green chillies cut long.
2 inch ginger finely chopped
5 garlic pod finely chopped
3 tsps coriander seeds(dhania)
8 cups water
1 tsp chilli powder(or as per ur taste)
salt to taste
Main dish
4 cups basmati rice
2 pepper corns
1/2 sp shahjeera
2 cardamom pods
1 inch cinnamon stick
1 star anise
1 tea red chilli powder
salt to taste
1 table spoon dhania powder
1 onion cut long
2 green chillies cut long
2 table spoons ginger garlic paste
1 tea spoon shahjeera
Cook the meat along with bay leaves, Cardamom, Cinnamon, Clove, Ginger, Garlic, Salt, Chilly powder, Pepper corns, Star anise, Shahjeera , Dhania and Water on low to medium flame for 1 hr or till meat is tender.
Cover with lid and keep stirring in between.
Check for salt and spice.Add anything required
Seperate all water with a seive. This extract is called SOUP. DO NOT discard this.
Seperate left over mutton pieces from the spices and keep them aside.
Wash Rice and keep it aside for 15 to 20 minutes.
Heat pan and put oil or ghee.
Fry onions,Green chilllies, Ginger-Garlic paste,Cinnamon,Star anise, Cardamom, Pepper Corns,shahjeera,chilli powder,salt,dhania powder. Fry on medium flame for 5 minutes or till onions are brown
Add Mutton pieces and fry for 5 more minutes.
Now add SOUP using a measuring cup (which measured the rice) and cook till done.
(We can add some water if the soup is not sufficient.)
